A Bellini is a cocktail made with Prosecco and peach puree. It is named after Bellini, a fifteenth-century painter who often used peach tones in his work.
The drink was first created in 1948 by Giuseppe Cipriani, founder of Harry’s Bar in Venice. He is said to have named it after the painter because of the drink’s colour, which reminded him of the painter’s work.
