Mezcal is a distilled alcoholic beverage made from the maguey plant. The word “mezcal” comes from Nahuatl mexcalli (in English, “oven-cooked agave”), and refers to the method of production more than the plant from which the drink is made. The drink is made from any of the several species of agave, such as the espadín, tobala, and arroqueño.
